Failproof Carnivore Pot Roast

My mom made the best pot roast. I lost my mom when I was only 30. Untreated Type 2 diabetes, CVD and glaucoma caused damage she never recovered from. When I saw Roxana's recipe for carnivore pot roast, I knew I had to try it.

I recently purchased a full set of GreenPan cookware. They make cooking and clean up a breeze, but the best part is they can go directly into the oven. I often use the deeper skillet to roast my meats. In this recipe it is so handy for searing the meat and then transferring to the oven and you don't need to dirty another pan. When you cook for a full house, less dirty dishes is a bonus.

This cooking process is perfect for tougher cuts of meat. A shoulder blade beef roast is shown but any roast that is 2"- 3" will work.

Ingredients: Directions:
  • Preheat oven to 350°F (175°C)
  • In an oven safe skillet or pan over medium heat, sear the roast in olive oil, avocado oil or melted butter on both sides for 3-5 minutes per side.
  • Season to taste with salt and pepper.
  • Cover the top with mustard and add 3 cups of hot water. Cover with a tight lid and transfer to the oven. Bake at 350°F (175°C) for 2.5 hrs.
  • Scrape the mustartd into the broth, remove the roast and let it rest on a cutting board. Use an immersible blender to blend the broth.
  • Serve the roast with bone removed and pour broth over.

It really is that easy. The hardest part is waiting until it's cooked because the house smells so good.

Dessert:

1 cup plain full fat Greek yogurt with ½ cup fresh or frozen strawberries and a tbs of unsweetened cacao powder.

Storage

Store leftovers, covered, in fridge for up to 4 days and up to 2 months in freezer. This reheats well. From fridge or freezer straight to the microwave, I recommend these silicone containers with ventable silicone lid. For more sizes, see below. Unlike plastic, silicone is safe for storing and heating.
