What Joy put on the table for Easter

Holiday meals are ripe for derailing even the easiest of 'Diet'. The beauty of Keto and this way of eating is that it is not a diet. It is a sustainable lifelong meal plan. I will always eat like this. Holiday meals come with enough challenges from family and friends, we don't need to add "What to Eat?"" to the stress.

Here is my compilation of this year's selection for Easter

First up is an appetizer to nibble on while I make the rest of the meal. I chose to make Cinnamon Churro Pork Rinds for the first time. I usually don't miss non keto foods especially sweet, non keto foods but I decided to try Keto Pork Rind Churros and I love them. They are addictive.

Joy's Keto Salted Cinnamon Pork Rind Churros
  • 4 oz of plain pork rinds, about 4 cups
  • ¼ cup of melted butter, I used Vital Farms but Kerrygold is just as good.
  • ¼ cup of granulated sweetener, I used Allulose but any sweetener will work.
  • 1 tbs of cinnamon. Use the best you can buy.
  • 1 tsp Redmond's Ancient Sea Salt

Mix the butter, Allulose, cinnamon and salt together and melt in the microwave or in a small pan. Don't let it boil, just microwave for 10-15 seconds.

Pour the flavoring over the pork rinds in a large bowl and stir.

You can eat right out of the bowl or bake at 400° F for 3-5 minutes in a conventional oven, 2 minutes at 350° in an air fryer. Let them cool and eat.

PMFS Bread

Next, I made PSMF bread. I wanted something to pair with my bacon and eggs at Easter breakfast and to use as a base for ham sandwiches later in the week. I was not disappointed in this recipe by Maria Emmerich. The recipe did not look like it was going to fluff enough but upon baking it overflowed my pan. A word on bacon grease

One of the best things about a keto meal plan is all the excess bacon grease I collect. I decided to turn the extra bacon grease into my own mayonnaise.

I followed this recipe and then used the deepest orange yolked eggs from Vital Farms to make a batch of deviled eggs. No real recipe for deviled eggs. Mix the hard boiled yolks with 1-2 Tablespoons of mayonnaise and a healthy squirt of yellow mustard. (About 1 tsp) Spoon the mixture back into the egg white shells and enjoy. Be sure to make 3x-4x what you think you'll need for the rest of the family. They are so good they do not make it to the dinner table.

In order to get bacon grease, you need to start with bacon. I use a nice sugar free bacon and the grease comes out clear and full flavored. For Easter I am wrapping around asparagus spears and baking for 20-25 minutes at 325* F or 10-15 minutes at 350* F in the air fryer.

Cauliflower Mash

I love cauliflower. I love it in any form, raw, steamed, cooked, baked, fried. I saw this bright buttery golden yellow head of cauliflower and just knew it would make the prefect mashed cauliflower side dish for Easter.

I steamed the whole head for 10 minutes in the instant pot, squeezed out the excess moisture with a thin towel and then mixed up with 2 Tablespoons butter, 2 Tablespoons cream cheese, ½ teaspoon salt.

It's not as bright gold as it was raw, but it tasted so good.

Ham

Ham can contain a lot of sugar and carbs. Cooked at 325* F until the temp is 165*F internally, about an hour, it came out soft and tender. Without sugar you can taste the smoky essence. It smells like a camp fire while cooking.

Leftovers

The final meal was all on one plate and served with love and lots of smiles. We will have plenty of leftovers for the week as I made Easter dinner several times this week while researching.

The Haul

This last picture is my haul from Sprouts the other day. The Outer Aisle cauliflower thins and the Kerrygold cheese did not last long enough to make it til Easter. I hope you enjoy a look into how to celebrate a food related holiday and not deter from your meal plan.
