Joy's homemade Keto Ice Cream, eggless and only 5 ingredients *with a bonus recipe.

Only a few days left in national Ice cream month, and I wanted to enjoy a scoop or two.

The leading popular store-bought brand of keto ice cream uses a sweetener that causes me severe headaches after consuming it. I usually do without or satisfy my craving with whipped cream, cream cheese mixture I flavor with a True Lemon packet and a touch of monk fruit.

With limited options and time running out, I made my own. While I can tolerate monk fruit and stevia. I chose monk fruit for this recipe. Tip *You only need ⅓ cup of powdered monk fruit for 2 cups of heavy whipping cream so get the smallest package possible, or if you're like me, make several batches.

This recipe is easy. No eggs, so no cooking or heating the cream. As hot as the desert Southwest has been, ANYTHING that keeps me from heating up the kitchen is a good thing.

I learned to cook before the invention of the internet. I am often ‘creative' with substitutions in a recipe. My mom had 1 recipe book and if I didn't have a cookbook from the library checked out, I would improvise. However, this recipe calls for xanthan gum. A great ingredient to have on hand for gravies as it is a great thickener. If you don't have xanthan gum, I recommend substituting Vodka! 2 tablespoons vodka. The xanthan gum and/or vodka is to keep the ice cream from freezing solid. I don't drink, but I was willing to check out a few samples for the sake of a good recipe.

Don't forget the ice and rock salt for your ice cream maker.

Tip * get plenty of ice. I used 1 ½ large bags of ice.

If you don't have an ice cream maker, you can place this in a glass jar and freeze. Stir to incorporate the ice crystal every 15-30 minutes until set.

Combine all ingredients until well mixed. Pour into your ice cream maker following manufacturer's directions.

Scoop out when solid and enjoy. Took over 2 full hours for me.

But wait! I promised a bonus recipe.

Joy's homemade French Vanilla coffee creamer.

Mix all the ingredients and store in a jar in the refrigerator.

I have my mother's original Hamilton Beach ice cream scoop. It is at least as old as I am. Maybe older. Sometimes it's the little things, like being able to use the same scoop I used every night as a child and recreate the joy at having a bowl of ice cream after dinner and staying on my keto way of eating.
