Egg roll in a bowl is one of those versatile dishes that you can make for any way of eating and taste buds.
I use coconut aminos instead of soy because soy is inflammatory for me. Coconut aminos have more carbs but they are clean strict keto, paleo, whole 30 approved. They are also soy, wheat and gluten free. Coconut aminos are lightly fermented and have a slight Umami flavor.

I usually assemble all the ingredients before I start. This is a hold over habit from before I got healthy. 3 years ago I couldn't bend down to get each individual spice and cast iron skillets needed. I took out everything all at the same time to save my back and repeated pain. Now that I'm healthy I find this is a good habit to keep.

Slice and chopped your vegetables to small pea sizes or slice into strips. It cooks down and rarely looks like what you started with.
In separate cast iron skillet (or any skillet) sauté your protein of choice. I have used all of the traditional ground meats, turkey, beef, chicken and pork and prefer ground turkey. My next batch I will try finely chopped shrimp as the protein. Use 1-2 tbsp olive oil if needed.
In a separate skillet sauté your vegetables in 1-2 tbsp of olive oil. You can use 1 skillet but your veggies may not get that nice caramelized coloring.
Add even amounts of dry seasonings and stock to each skillet. Stir and reduce.
Serve over steamed cauliflower rice, hearts of palm noodles, or by itself.
Top with green onion and red pepper flake to taste.

- 1 lbs. ground beef, turkey, chicken, or pork
- 2 cups chicken broth divided
- 1/2 raw onion
- 14 oz finely chopped cabbage and kale mix or 4-6 cups chopped cabbage
- 2 tsp garlic powder divided
- 1 tsp onion powder divided
- 4 tbsp Sambal Oeleck, or Sriracha Sauce, or 2 tbsp red pepper flakes divided
- 12 g finely chopped ginger divided
- 2 tsp black pepper divided (Tellicherry pepper is very good)
- 2-4 tbsp of Coconut Aminos to taste
